Raw honey is extracted without heating and simply filtered to remove debris, leaving all the health benefits. All honey is liquid when extracted and will eventually crystallize (become solid) over time. The length of time to crystallize depends on the nectar sources. Honey produced in Ontario comes from a wide range of wildflowers. Raw honey tends to crystallize with small crystals, becoming the consistency of peanut butter. Should the honey become difficult to get out of the jar, you can heat the honey, but we do not recommend microwaving it. Simply place it in a bowl of hot water or a pot of water on the store for a few minutes to start to soften the honey.
